Preparing the olives for pressing

The hard work of harvesting has not finished. Once we've gathered all the olives from the trees, and placed them into the bins, we now have to remove the leaves from the fruit and do some quality checks.


We use a special olive deleafer machine that helps us to quickly and efficiently seperate the leaves from the olives. The cleaned olives are checked thoroughly and any faulty fruit or rougue leaves are removed.


Once we're happy with the day's harvest, it's time to transport all the olives to the presser the same day. It's imperative to the quality of the oil that the pressing takes place within 24 hours of picking the olives from the trees. We use a family run pressing business which is located around 45 mins drive from our grove.
