How do you use your extra virgin olive oil?

Updated: Mar 1, 2021

Here in the Bay of Islands in the Far North of New Zealand, it's a well-known area for gardening of all kinds. We grow most of our own veges and fruit. And during the summer months is when we use the most olive oil - as an accompaniment to our salads.

We don't recommend using our extra virgin olive oil for general cooking purposes, as overheating can ruin the flavour. Rather use it sparingly post cooking, or alternatively, invest in a fill-your-own spray bottle. This will allow you to use minimal olive oil during the cooking process - great for roasting vegetables!

Here we used our olive oil on some herbed potatoes before we put them into the oven to roast, and then over our salad.

We paired our homemade salad with a crisp New Zealand Chardonnay. It really doesn't get any better than using your own home grown goods for a healthy meal!
